The grapes were hand-picked, whole-cluster pressed, barrel-fermented in neutral French oak and aged sur-lies for almost 3 years. After bottling, additional cellaring at estate for 2 years. A subtle,
sensual wine, with racy acidity backed by richness from extended barrel aging. No fining, no RS, all vegan, no BS. The wine medaled SILVER at the SF Chronicle’s 2025 Wine Competition. Recommended pairing this wine with classic
French dishes like salmon meunière or linguine vongole to experience the ultimate textural harmony.
